Coffee is roasted to order rather than to par, so nothing's left sitting around. Power Chicas, a single-origin from the women of Cafe Feminino in Peru, is roasted by the men in the prison, part of a programme that also runs a barista training workshop covering everything from milk steaming to latte art. Beans come ground to suit espresso, filter, pour over, cold brew, French press or percolator.
