They buy only from small organic farms with high cupping scores, then roast in-house on a Giesen 15-kilo batch roaster, air-drying and curing each batch overnight for a fuller flavor. Beans rotate monthly from different growing regions, and alongside espresso drinks they also pour fresh brewed hot and cold teas.
