Their SelvaSur de Peru coffee is naturally processed by coatimundis, which are fed the best coffee fruits as part of their diet; enzymes in the coati's stomach break down proteins that produce sour flavor, giving the coffee its unique taste. They also source organic coffee from Chiapas, Mexico, and ethically harvested beans grown in Peru's Satipo Province at 1,600–1,800 MAMSL.
