They source specialty beans from eight roasters across Europe and the US, rotating what's on the bar rather than sticking to one. They favour clean, washed and controlled-process lots where the origin really comes through, steering clear of heavily fermented or co-fermented coffees. Seasonal and signature drinks change with the year, and espresso gets dialled in throughout the day rather than just once each morning.
